Produce aggregation is an important concept and function in a local food system. Aggregation refers to bringing produce together from multiple sources to create a larger and more consistent supply to meet consumer demand. The Hartford Food Project produce aggregation system partners with local farmers and urban growers to supply schools, farmers markets, restaurants, food pantries and other community entities with locally sourced fresh produce.
